Why appam batter is not fermenting?

If the fermentation is not happening or if its winter, place the batter inside the oven with the oven light on! The heat inside will enhance fermentation. Just before we make appams, check the batter consistency. The coconut milk might make it a little more thicker.
What is the best combination for appam?
Appams are served with vegetable stew, kadala curry (chickpea curry), potato stew, vegetable korma, coconut chutney or coconut milk sweetened with jaggery. To make my favorite sweet coconut milk for pairing with palappam, the coconut milk is sweetened with jaggery and flavored with cardamom powder.
Why is my appam sticky?
If you use too much of boiled rice, the appams will become sticky. If the rice used is less, appams won’t be soft. Try using 1/2 to 3/4 cup of cooked rice but not more than that. While grinding the rice, try adding very little water.

How long can you keep appam batter outside?
If you are not making the appams immediately, keep the risen batter in the fridge until its time to make the appams. I make it by 7 in the morning. During the summer in Seattle , I keep it outside for 2 hours and then in the fridge , overnight. It will continue the fermentation process in the fridge.
